Just 45 calories each? Sign me up! What’s even better is that you can make these cookies vegan, gluten-free, sugar-free, soy-free and even grain-free! Combine all liquid ingredients (2 tbsp pure maple syrup or honey, 1 1/2 tbsp coconut or vegetable oil, 1 tsp pure vanilla extract). In a separate bowl, combine the dry ingredients (1 cup almond flour, a little over 1/8 tsp salt, 1/8 tsp baking soda), except PB and chocolate chips, and stir extremely well. Combine the two and mix, then squish into balls. Roll out the dough then cut with a cutter or the rim of a small glass. Freeze the dough for at least 20 minutes before cooking 10-13 minutes at 325 F on a greased cookie sheet. Let cool and then dig in!

In a large mixing bowl, combine all of the dry ingredients and stir very well. Then in a cup, combine all the liquid ingredients, then pour wet into dry and stir until all is fully mixed together. Transfer the mix to a plastic bag and smush into a ball. Either roll into smaller balls or leave it in the fridge until it’s a bit firmer. You can also bake these cookies if your heart so desires. Get this, they’re only 50 calories each.
